So, I think I’ve reached the question and answer phase of motherhood…

E: Can I have some more raisins? Where do raisins come from?

Me: You know, raisins come from grapes, right?

E: Where do grapes come from?

Me: They grow on a vine.

Anyway, the boy loves raisins, and I love that they’re a great alternative to more sugary snacks.

I was also impressed to find out that they also have lots of fiber, potassium, and iron. And at about 20 cents per serving for organic raisins, they’re also affordable.

We all know cooking from scratch is a great way to save money on groceries, but we’re all so busy it can be tough to find time to actually do it!

I put together a huge batch of these healthy 6-ingredient energy bites in about 15 minutes. (Without help from the kids, I think you could do it in 7 minutes.) I put enough for few days worth of snacks in the fridge and stashed the rest away in the freezer for later.

Disappearing Peanut Butter Cookie Dough Bites Recipe

Makes about 18 bites
Prep Time: 7 Minutes
Cook Time: Zero Minutes

Ingredients

1 cup raisins
1 cup oats
1/2 cup flax seed
1 cup almond flour
1/2 cup peanut butter, additional as needed to achieve consistency
1 tsp vanilla

Instructions

1. Use food processor to combine raisins, oats, flax seed, and almond flour. Divide into batches if necessary for smaller food processors.

2. Add in peanut butter and vanilla and mix until thoroughly combined in food processor. Add a little extra peanut butter if necessary to create desired stickiness.

3. Form into balls about 2 or 3 tablespoons each and enjoy. There’s no baking necessary!

4. Keep covered in the refrigerator, or in the freezer for longer storage.
